Hebden Bridge Hotel Recruits Michelin Star Chef
Moyles Hotel in West Yorkshire’s Hebden Bridge is sending out a strong message of intent that it aims to become one of the region’s finest restaurants, boasting a strong influence of Jean Christophe Novelli of Hell’s Kitchen fame.
Nicholas Wilson, who was chef at three Novelli establishments for a combined spell of more than seven years, has been appointed as head chef of Moyles hotel and restaurant, bringing all the catering under his direction.
Nick, 35, was the sous chef at Maison Novelli (1 Star Michelin), then continued his association with Novelli, as head chef at Novelli W8 (Red ‘M’ Michelin), and head chef at Les Saveurs in Mayfair (1 Star Michelin).
Wilson joins Moyles from award-winning and Michelin-rated The Walnut Club Restaurant in Hathersage on the outskirts of Sheffield, where he also ran the successful outside catering venture. His previous experience also includes a stint as chef consultant to a blue chip event catering company, where he cooked for Elton John and Coutts Bank.

Simon Moyle, founder and owner of the quirky, family-run hotel in the Pennine market town, said: “With Nick’s appointment, we are aiming to create a reputation as an eating venue of quality and distinction that can compete on a regional and national level.
“From breakfasts and a traditional afternoon tea to bar snacks and our a la carte menu, we want to offer an overall culinary experience that simply isn’t available for miles around. Nick is joined by 21-year-old sous chef Graham Mitchell, who was formerly at Lincolnshire’s Winteringham Fields, which has two Egon Ronay stars and was voted Northern Restaurant and Bar Best Restaurant 2007.
The pair are currently adding the final touches to the new Moyles menu, which will be a combination of West End contemporary-style cooking combined with local, fresh ingredients.
